Cooking with Sara: French Dip & Kale Chips
Apparently, over at the food blog, we played a long drawn-out game of dodgeball, and I'm the last one standing. So, as I'm looking around, with a smelly red rubber ball in my hands, I'm feeling a bit isolated and alone. And you know what I do when I'm alone - I talk to myself (and pretend that Rory is enraptured with my nonstop monolog). This time, talking to myself has morphed into making and posting more recipes on the food blog. So that it doesn't feel so much like a ghost town. I'm leaving the lights on, so to speak.
For the past few weeks, I've been trying to post two recipes each week. This week's pair is a deliberate step away from the sugar and butter: The first is just comfort food yum, with very little work or attention. The second is... hmmmmm.... I'm still not sure what to make of it. Kale Chips recipes have been making the rounds on food blogs, so I decided to finally try them. Next thing you know, I'll be crafting itty bitty cocktail umbrellas by hand. Watch out, folks. The girl's got time on her hands.

Sugar Substitutes
Want to hear something mildly shocking? I've cut nearly all the sugar from my diet.
For the average person, this might be no feat worth bragging about, but for me? Well. It's life-changing. I may as well have decided to start speaking in Pig Latin all day, it's that big a deal. Not eating sugar is a conscious choice that I must make throughout my entire day. "No sugar, Sara. Choose something else."
Why put myself through the agony of finding other ways to quiet my grumbling stomach? Another bit you may not know about me is that I've got a stubborn case of acne. I've been battling it for six years since my body was mucked up by taking (and then quitting) The Pill. I've tried all the popular cleansers, drinking lots of water, taking vitamins, using no fabric softeners, using "free & clear" laundry detergents, changing my pillowcases twice a week, and on and on. I did discover, a few years ago, that eliminating dairy from my diet cleared up all the breakouts on my forehead. It was a huge breakthrough moment for me, because you cannot put a price on feeling even a tiny bit less embarrassed.

But, my skin took a turn for the worse last December. I began battling painful acne on my neck and jawline, and each new spot took a month to heal. And it kept getting worse and kept leaving marks and kept making me sad. Because I agree with everything I've read that says acne is the outward evidence of a hormonal imbalance, I've started giving more thought to what I eat. And, it's no surprise that I eat quite a bit of sugar. Quite a bit. Having Sarandipity orders in front of me three nights a week is an obvious source of sugar. But, I also turn to baking sugary treats as a means to relieve stress. Which, of course, I eat. Every last crumb is devoured, because, seriously, I bake delicious things.
So, after reading comment after comment written by acne sufferers who cleared up after cleaning out the sugar, I decided to step up and try it myself. And then, I bumped into this article, detailing how both dairy and sugar throw insulin and hormones out of balance, and it sealed the deal for me. I've long had issues with sudden drops in my blood sugar, so I'm now thinking in terms of the things I can do to keep it even, eliminating the steep peaks and drops.

And, here we are. Seven treat-less days under my belt. The only place where sweet has maintained its stronghold is in my coffee. I've cut out the Splenda, but I haven't yet managed to cut out the flavored creamer. I'm weaning myself off it; my coffee is looking more and more like a sad watery brown instead of a lovely, cozy, and delicious shade of tan. But I'm content making baby steps there right now.
I've dropped the treats, the sugar, and I've quit serving starchy carbs with dinner. It sounds like a lot, and it has been a huge transition. But, I'm feeling extremely proud of myself for sticking to this. And, I'm finding joy in new foods - The crunch of a roasted almond. The variety of fruits I had previously bypassed when grocery shopping. The versatility of quinoa. The way a delicious sauce completely changes the taste of an entire dish. The rainbow of color I put into every meal.
I'm learning new ways to love food. And there are still so many foods I can love.

Yep. I cooked again. I kinda have a habit of doing that regularly. Every oh, say, day. But, this week, my meal plan contains five new recipes, so I'll be doing tons of experimenting and note-taking in the kitchen over the next few days. Do you jot notes down while you cook? I only do for new recipes, but I find it really helps later, when I want to remember what changes I made to a recipe - because I'm forever making changes! So, I'll be cooking and jotting and cooking and jotting every night this week. Do you have any interesting plans for the week?

Happy Farmers Market Week!
Bo and I visited an enormous, indoor farmers market over the weekend, and it was bananas. (Literally, of course.) It was like walking through Costco, but with fresh and organic everything, and there were even stations with samples. Ba-na-nas!
I posted more about it and a ton of (illegal) photos over on the food blog, so grab a cuppa 'jo and scoot on over!

Cooking with Sara: Taco Seasoning Mix
I was basically a cooking fool this weekend. Which is kinda nice; it's an indicator of how many chores I'm not doing, in favor of playing in the kitchen. In summary, it makes me happy to create new things in the kitchen. And this recipe, is definitely a shiny, new thing! It's shamefully easy and tastes pretty much like the packets you purchase at the grocery store. Minus all the funky ingredients and the packaging that ends up in the trash.
We tried it out last night on tacos and gave it the thumbs up.
(The other fruits of my kitchen time will get posted over the next couple of weeks: Blueberry Buckle and Strawberry Mojitos. Yummmmm.)

Even tho these puppies are freaking delicious, I discovered that the same sauce is even better on portobello mushrooms. I'll take this moment to fess up - I swiped all the grilled portobellos when Bo wasn't looking and didn't tell him until I'd eaten every single one of them. And then I didn't even apologize. I think I muttered something about how I deserved them if he was going to eat real, cow milk, ice cream sandwiches in front of me after dinner. No matter, all you need to know is that if you're of the veggie persuasion, this sauce is just as amazing with bell peppers and portobellos.

Cooking with Sara: Asian Beef Skewers

This is one of my favorite grilling recipes out there. It's asian-inspired, speedy-quick to make, and shoot, anything on a stick is just more fun, am I right? (You people on the fence: click here.) You can make it with various cuts of meat, just as long as you slice it across the grain. And, it's also decently portable; Marnie and I used to prep this recipe and then skewer and grill it whenever we tailgated for Chargers' games. And I must say, we were pretty popular out there in the parking lot. Even after we told our tailgating buddies that they were eating grilled venison :) Yes, you can even make it with venison.

Cooking with Sara: Roasted Asparagus with Browned Butter Balsamic Sauce

Ok, so yes, that title is a doozie. But when I tried to whittle it down, I couldn't think of what word to leave off - Certainly not the asparagus, it's the main player here. And it needs the balsamic in there so that you know it's not just a veggie plus butter. And, oh, that browned butter is truly the nectar of the gods, so it can't possibly be left out.... And, there you go. A long, stumbly recipe name that only uses a handful of ingredients. But don't let its simplicity fool you. This side will quickly become the star of your dinner show. And you won't even mind when it asks for its own separate trailer and chair with its long, rambling name printed on the back.
Also! Mellisa and I just started rearranging the furniture and picking paint samples over at the Blah blog. We're giving it a whole new look, and it's shaping up to be really cute! We plan to rotate that top banner photo in and out; the inaugural one up there with berries is a photo that Mellisa took - so pretty!

Front Page News
I haven't yet blabbed in my blog about my whopping two minutes of fame, so I'm playing share-n-tell today. Yes, I realize that many of you saw all of this last week when I posted to twitter and Facebook, using an obscene number of exclammation points. And if you have already seen all of this, please just nod your head and smile politely, as if I'm the old lady in the house on the corner of your street with crazy hair and a never-ending supply of warm cookies.
I should apologize for such pride and boastfulness, I really should. But after having my photos routinely rejected by other "fancier" food sites, this was real boost to my photo-esteem. I work so, so hard to take photos that are pretty, and it's no easy task in a kitchen with lighting that always casts an ugly shade of orange and gray to my pictures. Orange and gray casting does not make for appetizing pictures of food.
Most of the time, I smush myself up into the corner of the wall under our dining windows, so that I can use our benches as a "table." One day, I'll have Bo snap a picture of me sitting on the floor, smashed up against the wall, with half of me under our table, and cursing to high heaven about my large head blocking the wee bit of natural light coming in the window above. It's the opposite of glamorous.
I got smart and snapped my Strawberries photo in the kitchen window. Which required me to climb on the counters and balance my knees on the 2" strip of granite at the front of our sink. And then use the window sill as a balance to steady the wobbling that occured due to my kneecaps perched on that narrow strip of granite. I may also have cursed a few times. But I'm thinking it was worth it, for..... this!

Over at the food blog, we spent this week posting recipes that would be fantastic ideas for Super Bowl parties. My own party-food repertoire is pretty lacking, so I'm really excited that these Sliders turned out really yummy and so much healthier than traditional wings, to boot! Never mind the fact that we don't yet have any plans for Super Bowl. But if we do opt to do something last minute, I've finally got at least one option I can whip up with confidence. Do any of you have any recipes that I need to add to my Party Collection? If so, please share 'em!

Cooking with Sara: Thai Chicken Soup

| It's Thursday! Which means that it's my day to cook for the food blog! |
As I'm sitting here with frozen, stiff fingers, I'm wishing I still had that bowl of soup here to keep me warm. I'd even plunk my frozen digits right into the bowl, a la Palmolive commercials from the 80s. When I woke up this morning, the "feels like" temperature was hovering right around 5 degrees, and you wouldn't believe the number of clothing layers I'm wearing right now. Most of Atlanta is slowly recovering from our crazy weather earlier this week, but our little road is still covered in ice right at the crest of the hill where it connects to the main street. The street with stores and gas stations and food and space heaters. I used to be very pfft! about radiant space heaters; they feel great, but we have no need to spend our money on anything of the sort when we have central heating. Well, folks, I really want one. I want one baddddd.
But back to the matter at hand - Thursday cooking day for the blog!:
Also! Today is my blog's birthday! I didn't have any cakes handy (which is actually kind of surprising, considering it's me we're talking about here), so I'm settling for a clip-art-Thai-soup-birthday-wish instead. Flip off the lights, squeeze those eyelids shut, and take a deep breath.....

Cooking with Devon: Curry Squash Soup

Holy cow, that soup looks amazing! Maybe it's because I was a bad girl and skipped breakfast this morning. Maybe it's because it's 37 degrees outside and my hair is still wet. Regardless, this soup looks scrumptious, and I'm really wishing I had a big ol' bowl of it right here in front of me.
But I don't have one.
I haven't even tasted a little sip of it.
Because Devon made it for me. For the food blog. And she doesn't even live in my state. So, I'm forced to be content just staring at that photo, wishing I had a pressure cooker and a stick mixer and all the ingredients on my kitchen counter.

Animal Cruelty

This is a sweet potato nubbin leftover from my dinner tonight. Ain't she the best sport ever?

Seriously, this never ever gets old. I laugh hysterically, and then Bo ends up having to take the photo because I'm doubled over, unable to hold the camera still enough to function.

Doesn't she totally look like a rhinoceros? A Ror-oceros, I say :)

Oooone day, I'll work on making her poses more creative than the ones I'm always snapping pictures of. Ideas?

Cooking With Sara: Red Velvet Cupcakes

You knew it was only a matter of time before I'd revert back to my cake-baking ways. But one out of my three Cooking With entries dedicated to a baked good - those aren't terrible odds. I promise, I really have tried to refrain from baking entries in the name of being more creative and testing out "real" food recipes (I'd argue that cake is, indeed, real food). But, hey I've got a deadline looming with some Sarandipity orders, and I need to test out a cake recipe. So here we are.
I've tried some Red Velvet recipes in the past, but I've never been too pleased with the results. It just seemed so "meh" tasting after all that flashy red color and white frosting contrast. All pretty and no tasty. Like, all beauty and no brains. We certainly can't have any of that here, so I continued my search for a recipe that looked promising. And with a photo like this, how could the results be anything other an amaazzzzingggggg? I mean seriously, who here didn't try to lick their monitors when presented with that beautiful photo of cake heaven? So, I tried out Pinch My Salt's recipe and, as always, made a few modifications of my own.
In summary, I'm not terribly fond of this recipe either. As Bo put it, "it just isn't velvety." And he's dead right. The texture isn't dense and moist and well, velvety. And I had the same luck with cream cheese frosting that I always seem to have - as is, the recipe turns out soupy. I increased the powdered sugar from 2 1/2 cups to nearly 8. Yes, 8 cups of powdered sugar. I modified the recipe below to remove half the cream cheese, so that should help. The quest continues...
Red Velvet Cake (a.k.a. Waldorf Astoria Cake)
2 1/2 cups sifted cake flour*
1 teaspoon baking powder
1 teaspoon salt
2 Tablespoons cocoa powder (unsweetened)
2 oz. red food coloring
1/2 cup unsalted butter, at room temperature
1 1/2 cups sugar
2 eggs, at room temperature
1 teaspoon vanilla extract
1 cup buttermilk, at room temperature
1 teaspoon white vinegar
1 teaspoon baking soda
1. Preheat oven to 350 degrees. Line cupcake pans with 24 papers. (This recipe yielded 23 cupcakes for me.)
2. Sift together the cake flour, baking powder, and salt into a medium bowl; set aside. In a small bowl, mix food coloring and cocoa powder to form a soupy mixture without lumps; set aside.
3. In a large bowl, using a hand mixer or stand mixer, beat butter and sugar together until light and fluffy, about three minutes. Beat in eggs, one at a time, then beat in vanilla and the red cocoa mixture, scraping down the bowl with a spatula as you go. Add one third of the flour mixture to the butter mixture, beat well, then beat in half of the buttermilk. Beat in another third of flour mixture, then second half of buttermilk. End with the last third of the flour mixture, beat until well combined, making sure to scrape down the bowl with a spatula.

4. In a small bowl, mix vinegar and baking soda. Yes, it will fizz! Add it to the cake batter and stir well to combine. (The batter will almost look puffy.) Working quickly, divide batter evenly between the cupcake pans using your trusty cookie scoop, and place them in a preheated 350 degree oven. Bake for 20-25 minutes. Check early, cake is done when a toothpick inserted in the center comes out clean.

5. Cool the cakes in their pans on a wire rack for 10 minutes. Remove from pans and allow cakes to cool completely before frosting. Frost with buttercream or cream cheese icing (recipe below).
* Recipe Notes: Sift cake flour once before measuring, then sift again with the other dry ingredients per recipe instructions.

Cream Cheese Frosting
8 oz. cream cheese (1 packages), softened
1/2 cup unsalted butter (one stick), softened
1 teaspoon vanilla extract
pinch of salt
3-4 cups powdered sugar, sifted
With an electric mixer, blend together cream cheese and butter until smooth. Mix in salt and vanilla until combined. Turn mixer to low speed and blend in powdered sugar, 1/3 at a time, scraping sides of bowl between each addition. Turn mixer on high and beat until light and fluffy. Use immediately or refrigerate, covered, until ready to use. If refrigerated, the frosting will need to be brought to room temperature before using.

I'm Scared
Of this:
We're tending to a lone tomato plant on our back patio. When I say "we," I actually mean Bo. He dutifully waters and fertilizes the thing, and I go out to admire it from time to time. It really has grown a massive amount in the past few months. And there are small little tomatoes scattered throughout its leaves.But the size isn't what scares me. It's those tomatoes. I hate tomatoes. The slime inside them makes me gag. It sticks to my throat and slowly drips its way down to my stomach. This is if I can even get them past my tongue. In my defense, I've tried - TRIED - to like them. It's the hugest pain to always be asking places to hold the tomatoes, and I'm missing out on what could be amazing food. Bruschetta? We've never been properly introduced; alas, I've only admired you from afar.
The part that's especially scary is that I've heard eighty million times how AMAZING homegrown tomatoes are. Sure, sure, I don't doubt that for a second. And I know that as soon as those babies are ripe, Bo is going to make me taste one. My lips are squirming just thinking about it. Had I been smart, I would've planted an eggplant and made him return the favor of tasting something he hates. Oh well. Wish me luck.
For scale. Plus, it's fun to make her pose with ridiculous things.
Rory's not so much a fan of the giant beanstalk of a thing either. Maybe that's because she can no longer root around in the dirt. She dug us some pretty good holes when it was sitting within reach of her little paws.
