This week, I made Baked Coconut Shrimp - easy, yummy, rich, and does not require a speck of oil. We both loved them! I think they'd shine as an appetizer; they're a little too rich for a main course. I think I'll make them the next time people come over for dinner. Any volunteers? :)
I gotta get a job where I get to dress up all cute like - it would do wonders for my cooking I think! :) Going to try this recipe out next week when I get some more shrimp - I need to get a bigger size we usually get really small shrimp - not sure why.
